The key to culture is understanding the genetic code of food and nothing is more important to Mexico than traditions carried from village to village for thousands of years. Our goal is to translate historic traditions, farming and regional influences through our “ancestral lens” of gastro-tourism.

GLOBAL is a series of collaborative workshops and events to create an international ecosystem of gastronomic tourism narrated by influential chefs, story tellers and media
Mexico will host a week celebrating the ancestral culture filled with educational experiences that prepare teams of international chefs for competition. Artisans, farmers, media and narrators will take the world on a gastronomic journey of meaningful exchanges. The first five days of immersion focus on genetics, ancestral, pre-hispanic, mayora and modern. The sixth day is filled with panel discussions while the chefs prepare for competition. Trade and media are encouraged to attend the discussions interweaving topics of gender, monoculture and feeding our youth.
On the seventh day, the whole world watches to see who will win the international culinary competition.
International chefs, chefs from Mexico, teachers and artisans alongside ticket holders embark on a week-long journey of destinations including farms and markets, food tours, sponsored activations and events in hopes of building the winning judge’s plate.
The seven day program will focus on the traditional and modern food, social impact and global causes in hopes of supporting artisans sustaining local agricultural. Through a blend of cultural exchanges, participating chefs alongside media will compose ideas for the world to witness.
Chef teams are challenged to unite ideas and ingredients collected during the week. Through immersion, they translate taste of place into a Judge’s Plate voted on by celebrity judges and consumers.
Chefs are selected based on their dedication to the preservation of culture and sustainable agriculture through action. Together, we provide the rediscovery of relatively unknown food projects in Mexico and abroad through various forms of media and technology.
Scarcity is a global problem. Across the world, small family farmers are disappearing. Today in North America more than 90% of all farmers (United States, Canada and Mexico) are 60+ years old. Fortunately, the local food movement is gaining support and source-driven chefs are expanding operations and the demand for safe food increases daily. Unfortunately, our very tiny and fragile ecosystem of independent farmers is in decline and collectively points to a serious problem in the future.
This is an international concern and we need platforms to bring like-minded people to the table. We need a resurgence of farmers to meet the demand in the next 40 years. GLOBAL is a celebration of local food, tradition and an opportunity to build a conversation that can change the future.
GLOBAL is composed of tourism boards and media from around the world. Public relation teams and agencies are welcome to invite, collaborate and represent participating chefs, sponsors and global brands. International media groups will translate the mission and story-tellers of historic cultures and food artisans.
